Care, Repair and Maintenance Tips for Your CombiMaster® Plus
The unit must be cleaned every day to maintain the high quality of the stainless steel, for hygiene reasons and to avoid operating faults.
If the unit is not cleaned or is not cleaned well enough, deposits of grease or food residues in the cooking cabinet may catch fire.
Use only the factory-recommended cleaning solutions for de-scaling and de-liming.
To avoid corrosion in the cooking cabinet, your unit must be cleaned every day, even if it is only operated in steaming mode.
Apply vegetable oil or grease to the inside of the cooking cabinet at regular intervals (every 2 weeks or so) to prevent corrosion.
Servicing the incoming air filter. The device automatically recognizes when the air filter is soiled. You’ll receive a service message and a request to replace the air filter when the air filter is soiled.
The unit must not be operated without the air filter. Please heed the following when replacing the air filter:
Unit size 6×1/1 GN, 6×2/1 GN, 10×1/1 GN und die 10×2/1 GN
Air filter part number: 40.03.461
The user can replace this air filter. When the air filter is replaced, the new air filter must be inserted in the correct position. Please follow the instructions in the Maintenance section of your operating manual on how to replace the air filter.

An authorized service partner can only replace this air filter.
